375° | Serves 8

6 ears fresh corn, cut off cob

1 medium sized green pepper, chopped

5 medium sized tomatoes, sliced ½ inch thick

½ tsp pepper

1 medium sized onion, chopped

2 tbsp. butter

1 tbsp. salt

1 cup soft bread crumbs

2tbsp. butter, melted

Combine corn, onion & pepper - sauté in 2 tbsp. butter for 5 min.  Spoon half of corn mixture into a 2 quart casserole (greased) top with half of the tomato slices.  Sprinkle with half of salt & pepper.  Repeat the layers.  Combine breadcrumbs & 2 tbsp. melted butter; sprinkle evenly over casserole.  Bake 30 minutes
